To make a long story short, just go to the Settings app, then continue inGeneral > Software update.From there, let yourself be guided.

iOS 18.1: room for Apple Intelligence… But not (yet) in France

iOS 18.1 brings several notable changes. The biggest of them:l’I.A. Unfortunately for users outside the USA, Apple Intelligence is currently not accessible. For France, we will have to wait a few more months and the start of 2025.
